GameDay Snacks- Jalepeno Poppers
So- my husband got me hooked on jalepeno poppers....
Let's be real- they're delicious... you could fry a shoe and it would taste delicious. Stuff it with cream cheese and cheddar and I mean... mouth heaven.
Now- you and I both know most bars will not serve you the recipe I'm about to share with you... but if you're at home and in the mood, these make an awesome addition to your spread.
Now, as you'll see, I slice these in half instead of stuffing them whole. I find they're easier to fill (less chance of jalepeno hands) and it makes them last a lot longer. Also- I use vegan sausage and fake bacon. If you're not a vegetarian, use a healthier option like an italian chicken or turkey sausage and skip the bacon for a sprinkle of cheese instead.
Grab the following:
10 thick jalepenos
1 diced sausage (I use the trader joes vegan ones- they're about 140 calories and are GMO free)
1/3 package (est 3-4 tbsp) light cream cheese (softened)
1/4 cup shredded cheese blend
(optional - 2 tbsp diced onions, slices of facon bacon)
During halftime:
Heat your oven to 375 and spray a baking sheet with cooking spray or coconut oil (*this is when I soften the cream cheese on the stovetop)
Clean your jalepenos (wear gloves!!) by chopping the tops off, slicing lengthwise, and clearing out the white part and seeds. (If you're so inclined to stuff em, use a paring knife to clean out all of the seeds.) The seeds are what makes them hot so beware!
Dice the sausage to your liking and place in a mixing bowl
Beat in cream cheese and shredded cheese with a fork or spatula
Once your filling is combined, spoon into halved jalepenos and line along your baking sheet. Top with cheese or fake bacon and bake at 375 for 20 minutes or until cheese is browned or facon bacon is crispy. Allow to cool for 5 minutes and enjoy!
